Pre-heat oven to 350* whisk together eggs, milk, salt, pepper, and nutmeg and set aside Lightly saute potatoes and put in cookware, Next lightly saute green peppers and onions and add, Finally saute mushrooms and spinach and add. Then poor egg/milk mixture over top and back for 1hour 15 minutes or until top is turning a golden brown. Let cool and warm, or cool, refrigerate and then microwave slices for 2-3 minutes when hungry.

try baking for 1 hour 15 minutes for better results.
