  1. Top of the Hill Frittata

    2.5qt deep dish ovenware
    6 medium eggs
    2 cups milk
    4 small red potatoes cubed to size of dice
    1/2 medium onion chopped
    1/2 green pepper chopped
    6 mushroom sliced
    half bag of baby spinach
    1TB olive oil
    dash of salt
    fresh ground pepper and nutmeg

    Pre-heat oven to 350*
    whisk together eggs, milk, salt, pepper, and nutmeg and set aside
    Lightly saute potatoes and put in cookware,
    Next lightly saute green peppers and onions and add,
    Finally saute mushrooms and spinach and add.
    Then poor egg/milk mixture over top and back for 1hour 15 minutes or until top is turning a golden brown. Let cool and warm, or cool, refrigerate and then microwave slices for 2-3 minutes when hungry.

  2. Top of the Hill Spinach and Bacon Quiche

    1 deep dish pie shell
    5 medium eggs
    1.5 cups half and half
    4 slices thick bacon or 6 thin, cooked and crumbled
    the other half of the bag of spinach
    dash of salt
    (pepper and nutmeg, optional)
    Heat oven to 350
    Whisk together eggs/half and half, salt, etc.
    Place crumbled bacon in pie shell
    Saute spinach in a little olive oil or some of the bacon grease and add over bacon
    Pour egg mixture in to fill pie shell, bake at 350 for an hour to an hour and 15 minutes, until top is golden brown.
